#HomeChefMatters 2.0  – An all-day conference for Home Chefs. As a super foodie I am fortunate to be a part of whole day extravaganza on food. At Pallazzio, St. Regis Hotel, Mumbai – Friday, 24 November, 2017. Organized by FBAI (Food Bloggers Association of India) in association with Vikhroli Cucina. An assemblage of chefs, bloggers, recipe guru’s, designs, kitchen gadgets, appliances and other culinary delights. The conference was an initiative to learn & understand the genesis of preserving ‘Lost Recipes’. Learn the basics of famous cuisine by experts and indulge in fruitful networking.

HomeChefMatters 2.0 – It’s all about Food, Lost Recipes & Hand Hygiene

The reverie established with the collaboration of India’s Home Chef brands synonymous with Food. Godrej Nature’s Basket, Godrej Appliances, Godrej Interio, Cartini, Godrej Protekt, FBAI, along with Country’s most talented chefs. Ever peppy & stylish Vicky Ratnani; super talented Harpal Singh Sokhi. Suave & dashing Ranveer Brar; food stylist Michael Swamy. India’s very own celebrity gastronomes and blogger Rushina Munshaw Ghildiyal. The agenda was to deliberate on ‘Home Chef‘ cooking & preserving the Lost Recipes. Healthy habits, eating right, home food v/s outside food, protection against germs, hygiene and much more.

With the power packed panel discussions across gastronomic expanse, audience learned various insights from acclaimed speakers. Kunal Vijayakar, Chef Ranveer Brar, Rashmi Uday Singh, Vineet Bhatia, and many more. Keep it basic, do not over power the presentation, hand sanitized & work area clean, keeping age old recipes alive. The topics touched around by the panelists were simple and close to heart.

Preserve The Lost Recipes

When Chef Ranveer Brar shared an anecdote – How our Homely & Humble Butter Chicken has gone under so many changes. It excites to get the same taste of everyone’s favorite dish at few local joints in Amritsar, Punjab. Chef Hemant Oberoi shared the experience from his years of practice – ‘stick to basics’ brings best out of the food.

Indian cuisine is versatile, rich, colorful and loved by all. It is time we feel proud of our gastronomic heritage. Pass it to future generations, for them to connect with the roots. I still recall when Grandmother used to make – Tandoori Roti at small home made Tandoor. But when it comes to me – I have no clue how to handle Tandoor. Rather I call the home delivery.

Impromptu Cook Off Challenge for Home Chefs –

Preparing Ghoonghat mein Biagan

Impromptu session of Cook Off turned the heat on – audience was divided into small teams and were given a challenge to cook. Cook a recipe from your heart using Godrej Oils along with hygiene specialist Godrej Protekt. Lost recipe worth preserving or add in a dash of twist. My team chose eggplant/ aubergine & walnuts as our main ingredients. We cooked ‘Ghoonghat Mein Baigan‘ (eggplant role with onion, beans, garlic and tomatoes filling). My prowess at chopping counter was – peeling, cutting, slicing. Read few hacks from my kitchen – Favorite 5 from My Kitchen.

For dessert we made Pineapple & Walnut pudding – named it ‘Ananaas- Akhrot Halwa‘.

Kitchen & Hand Hygiene – Cooking Ritual

Food makes us strong, happy, going but without safety & protection by an expert the same nourishment can turn into disease.
